To answer your question, yes Zephrys does know the cards in your deck. But as others stated it only gives Basic and Classic cards. On the bright side he won't offer you Lay on Hands if you don't have any cards in deck
I think the class identity breakdown is a good starting point in making each class feel distinctive. However, some of the cards in SoU don't seem to fit at all like the Paladin Quest. The other quests definitely feel in line with their respective classes. Priest heals, Rogue steals, Warrior uses weapons, Mage casts spells, Hunter summons beasts/minions, and Shamans like Battlecrys(?).

Unless there is some weird hack I am unaware of, you can only use Amazon Coins for purchase in-app. You cannot use Amazon Coins on the Blizzard store.
For the Uldum bundle, I believe it is available in the app itself so you should be able to use Amazon Coins to buy it.
